چکیده

Background: Fresh microgreens are nutrient dense crops with high moisture content, thus have a short life span. Application of different drying techniques enhanced its shelf but leads to losses. There is permanent need enhance the retention in dried microgreen. Methods: The research study investigated during 2019-2020 at Punjab Agricultural University. Broccoli (Brassica oleracea var. Palam Samridhi) seeds were soaked overnight and grown outdoor setting harvested 10th day after germination. broccoli using shade drying, tray microwave drying. Dried samples analyzed for nutritional parameters. Result: Microgreens contain significantly higher nutrients (Ca, Fe, Zn, Mg, K, ascorbic acid b carotene), bioactive compounds (chlorophyll, total flavanoids phenols) antioxidant activity as compared their sprouts mature counterparts. These excellent sources Ca, Vitamin C beta carotene (pro-vitamin A), meeting per cent estimated average requirements (EAR) 536%, 373%, 264%, 228%, 38%, 20% Indian adult. To address problem perishability, there prolong while retaining quality. present has identified optimum technique, on basis retention, from set alternate techniques. Significant content (16.80 mg/100 g), chlorophyll (3.63 g/100 (67.55%), Zn (35.23 Fe (57.66 Ca (2857 K (334.23 g) Mg (706.43 observed microgreens. Incorporation microgreen powder food sprinkler resulted significant increase vitamins, minerals, control.

detection of volatile compounds of medicinal plants with some nano-sorbents using modified or new methodologies and investigation of antioxidant activity of their methanolic extracts

in this work, a novel and fast method for direct analysis of volatile compounds (davc) of medicinal plants has been developed by holding a filament from different parts of a plant in the gc injection port. the extraction and analysis of volatile components of a small amount of plant were carried out in one-step without any sample preparation. after optimization of temperature, extraction time a...

Effect of Freeze-Drying Conditions on Antioxidant Compounds of Broccoli

The effect freeze-drying conditions, i.e. particle size, use of infrared radiation, and drying air temperature in Atmospheric Freeze-Drying (AFD) or freezing rate in vacuum Freeze-Drying (VFD) on the total selenium content, total polyphenols content and anti-radical power of broccoli was investigated. Two factorial designs were used, with three factors in two levels each one, for each type of f...

Composition and antioxidant activity of kale (Brassica oleracea L. var. acephala) raw and cooked.

BACKGROUND Cabbage vegetables, like Brassica group, are perceived as very valuable food products. They have a very good nutritive value, high antioxidant activity and pro-healthy potential. Especially, kale (Brassica oleracea L. var. acephala) is characterized by good nutritional and pro-healthy properties, but this vegetable is not popular in Poland. The aim of this work was to assess the chem...

Effect of hydrothermal treatment on the antioxidant properties of broccoli (Brassica oleracea var. botrytis italica) florets.

In the extracts of fresh raw and frozen broccoli, caffeic, ferulic, sinapinic acids and kaempferol were identified. Boiling reduced the amounts of caffeic acid and kaempferol in both samples. The concentration of polyphenols was 2.69mg/g fresh mass and 0.96mg/fresh mass in fresh raw broccoli and frozen raw broccoli, respectively. Boiling significantly decreased the amounts of phenolic compounds...
